Methi Masala Mathri


Ingredients:

  • 2 cup All purpose flour
  • 3/4 cup Ghee
  • 1 cup Methi
  • Salt as per taste
  • Lukewarm water as needed
  • Oil to fry



Method:

  • Mix all purpose flour,ghee,methi and salt rub it for 4-5 mts.
  • After that use water to make smooth dough.
  • Make small balls out of this dough .
  • Flatten these small balls into diameter of 2 inch.
  • Heat the oil on medium heat.
  • Deep fry the mathris until they turn golden brown.

Coconut Cookies with chocolate drizzle !!


Ingredients:
  • 1&1/4 cup all purpose flour
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt 
  • 3/4 cup  coconut flakes
  • 1/2 cup Melted Chocolate (optional)
  • Milk as needed to smooth-en dough
Method:
  • Preheat the oven to 250°F for 2-3 mts
  • Beat sugar and butter together until it turns creamy
  • In another bowl sift  the flour, baking powder, baking soda, and salt. 
  • Add the flour mixture to the creamed mixture mix it well. 
  • After that add coconut flakes and make a smooth dough with the help of milk. 
  • Grease the baking tray and bake it for 8-10 mts until it turns light golden brown. 
  • Once cookies have cooled completely, drizzle with the melted dark chocolate.

Eggless Carrot Cake !!


Eggless Carrot Cake

Ingredients:

  • 1 cup Wheat flour
  • 1&1/2 cup grated Carrot
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1 tsp Cinnamon powder
  • 1/4 tsp Salt
  • 1/2 cup curd
  • 1/2 cup Oil
  • 1 cup Sugar
  • 1 tsp Vanilla extract
  • 2 tbsp almonds chopped
  • 2-3 tablespoon milk


Method:

  • Preheat the oven to 350F just 2-3 minute before your batter is ready.
  • Mix the wheat flour, baking powder, soda , cinnamon and salt. Add grated carrots and almonds to this. Mix well.
  • Whisk curd, sugar, oil and vanilla extract together.
  • Combine the mixture made in step 2 &3. If you feel the batter is too dry, add small amount of milk.
  • Grease the 9 inch baking tray with oil.
  • Pour this in the pan. Bake for about 20-25 minutes or until toothpick test is pass.

Parwal ki Mithai


Ingredients:


  • 11 Parwals (Snake Gourd) 
  • 1 cup mawa (Making mawa at home is a good option)
  • 1&1/2 cup sugar
  • 1/4 teaspoon Cardamom powder
  • 3 tablespoon almonds chopped
  • 3 tablespoon Pistachios chopped
  • 2 tablespoon Shredded coconut
  • Few drops of rose water


Method for making Mawa
  • Take 4 cups milk and boil.  
  • Boil the milk till it reaches to a semi-solid state.  


Method for stuffing
  •  Roast the mawa on medium heat for 1 minute. Add half cup sugar and roast for 1 more minute.
  •  Add cardamom, almonds, pistachioes and coconut and mix them well


Finally making the Mithai

  • In another pan boil the remaining sugar with half cup water to make a  sugar syrup. 
  • Peel all the Parwals, and make a vertical cut to take out all the seeds.
  • Boil the parwal for 2-3 mts.
  • After that drain the water out and put all the Parwals into the sugar syrup.
  • Boil this sugar syrup with Parwal on medium heat for 10-15 mts
  • Close down the heat and keep the Parwal in sugar syrup for 1 hour
  • Take out the Parwal from sugar syrup fill the mawa mixture in it.
  • Served Chilled.

Mango Flavoured Milk Cake

Ingredients:

5 cups of Milk
1 cup Mango pulp
Sugar as per taste
2 Table spoon Milk powder
1/4 teaspoon Cardamom powder
3-4 tablespoon Lemon juice

Sliced pistachios and almonds for garnishing
Saffron


Method:


  1. Boil 5 cups of milk in a heavy bottomed pan.
  2. Add the lemon juice gradually and stir the milk gently. 
  3. Take out paneer with the help of cloth.
  4. Rinse under cold water to take out the sour of lemon.
  5. Take out the excess water.
  6. Take pan add sugar, paneer, mango pulp, milk powder and to cook while it become a soft lump.
  7. Pour it over greased plate.
  8. Freeze it for some time.

Eggless Chocolate Marble Cake




Ingredients: 


1&1/4 cup all purpose flour

1/2 cup butter

1 cup milk

3/4 cup powder sugar

3-4 tablespoon condensed milk

2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon vanilla extract

2 tablespoon coco powder

2 tablespoon hot water


Method:
  •  Mix all purpose flour,baking powder and baking soda.
  •  Take another bowl to mix butter and sugar. Stir till it becomes creamy. After that add condensed milk and vanilla extract.
  •  In the mixture add small-small amount of dry ingredients and small amount of milk.
  •  After that take 1/4 cup of mixture add coco powder and water make a batter.
  • Grease the 8 inch baking tray with butter.
  •  In baking tray first add white mixture after that add chocolate mixture repeat 
  • this 2 times.
  •  Bake the mixture at 330 degree f.

Coconut burfi ( नारियल चक्की)




Ingredients:

  • 2 cup shredded Coconut
  • 1 cup Sugar 
  • 1/2 cup Water
  • 2 tbsp Milk
  • 1 tbsp Ghee
  • 1/2 tsp Cardamom Powder
  • Almonds for garnishing





Method:
  •  Heat a pan, add the coconut shreds and fry for 2-3 mts.
  •  Now in a separate bowl, boil water.
  •  When the water boils, add the sugar .
  •  Add the milk to the boiling sugar syrup.
  •  Boil sugar till it turns to a 2 thread syrup.
  • Add the fried coconut shreds to it.
  •  Mix it well.
  •  Now add the ghee and cardamom powder.
  •  Spread it in a flat try, and cut into small square pieces
  •  Garnish with almonds.

Balushahi (बालूशाही)


Balushahi (बालूशाही)

Ingredients:
All purpose flour (maida) 1 1/2 cups
Baking soda 1/4 teaspoon

Pure ghee 1/4 cup ghee
Curd 1/4 cup
Sugar 1 cup
Pistachios & alomonds for garnishing

Method:
1 Mix the flour and baking soda. Add ghee and mix it.After that add curd to make a soft dough.
2 Cover the dough and sit for atleast 30-35 mts.
3 Make the sugar syrup with 1/2 cup of water till it reaches to one thread consistency.
4 Make a small small balls of the dough.
5 Deep fry in ghee at medium heat for 10-15 mts.
6 Put the balushahi in the sugar syrup for 1 hour.
7 Garnish with pistachios and almond.

Besan Burfi

Ingredients:

2 cup Besan

1 cup Ghee

2 Cup Powdered Sugar

1 Tablespoon Cardamom Powder

Sliced Pistachios & Almonds


Method:

1 Heat ghee in pan add besan and fry until it turns golden brown and give sweet smell.

2 After that when besan cools down add sugar and cardamom powder.

3 Grease a tray and pour the mixture.

4 After an hour when chikki is tight, cut into desired shapes and garnish with pistachios and almonds.

Eggless Bread Pancake


*****Recipe for Eggless Bread Pancake*****

Ingredients:

15 Bread slices

1/2 cup Sooji

1&1/2 cup chopped Onion

2-3 Tablespoon shredded Ginger

2-3 Green chillies chopped

1 teaspoon Mustard seeds

2 Tablespoon Curd

2 Teaspoon Rice flour

Salt as per taste

Oil for fry

Cilantro chopped

Method

1 Trim the edges of the bread slices. Soak the slices in water.
2 Take sooji, rice flour, salt and add sufficient water to make a thin batter.
3 After that add bread into the batter along with curd.
4 Put the batter in a mixer and blend.
5 Heat two tablespoons of oil in a pan.After that add mustard seeds, ginger, green chillies, onion and fry until light golden brown.Transfer this into batter and add cilantro.
6 Heat Dosa pan. Put some oil. Pour a big spoon of the batter on the pan and spread.
7 Pour a little oil on top and sides and cook for two to three minutes.
8 Turn and cook the other side similarly.
9 Serve hot with Coconut green chutney.

दिलवाली छोला टिक्की


दिलवाली छोला टिक्की .....:)


Ingredients:For Tikki

2 Big Boiled Potato


2 Tablespoon Sooji

5 Breads 

Salt as per taste

Ingredients:For Stuffing

1 cup Peas Boiled and lightly mashed

1 teaspoon Garam Masala

1 teaspoon Red chilli powder

1 tablespoon Ginger Paste

1 tablespoon Green Chilli paste

Ingredients:For Chhola

1 cup Chola

3 tablespoon ginger

3 Green Chilli

2 Tomato chopped

2 tablespoon Red chilli powder

2-3 tablespoon Coriander Powder

1 teaspoon Turmeric powder

2-3 tablespoon chhola masala

1 tablespoon Garam masala

1/2 cup Tamarind juice

3 tablespoon Oil

1 tablespoon Cumin seeds

Pinch of Hing

Salt as per taste

cliantro chopped


Method:For chhola

1 Heat the oil add cumin seeds and hing. When seeds crack add ginger,green chilli. Saute for 2 mts after that add tomato. Fry for 3-4 mts.

2 After that add chhola and add all dry ingredients and tamarind and boil 4-5 mts. Garnish with cilantro.


Method:For Stuffing

1 Mix the peas with all the ingredients.


Method:For Tikki

1 Mash the potato add salt,bread and sooji.

2 Divide the mash potato in equal sized round balls and then flat these balls with your palm.

3 Put some stuffing in mid of these flat doughs, and again make a round ball out of it so that stuffing is closed inside

4 Again flat these round balls, and cut into desierd shape

5 Fry on a non stick pan with some ghee/oil till its golden brown

6 Served Hot!!


Cumin Cookies

Ingredients:

1 cup All Purpose Flour

1 tablespoon cumin seeds

3 tablespoon oil

1/4 tsp baking soda

1 tablespoon sugar

1/2 cup milk as needed to make smooth dough

salt to taste

Method:

1 Mix all the dry ingredients and make smooth dough.

2 Grease the baking tray and bake at 250F till it turns golden brown.
